Plum

A traditional sago plum pudding is the ultimate autumn comfort food. Serve with warm custard.

Sago plum pudding Recipe

Ingredients

1½ cups breadcrumbs (Market Organics, Stalls 45-55, I Shed)
1½ cups raisins (Nut Trek, Shop 55-56, Dairy Hall)
1 cup sugar (Nut Trek, Shop 55-56, Dairy Hall)
3 tbsp sago (tapioca seeds)
1½ cups milk, plus a little extra (Market Organics, Stalls 45-55, I Shed)
1 teaspoon bi-carb soda (Nut Trek, Shop 55-56, Dairy Hall)
90 grams butter, melted (Curds and Whey, Shop 12-13, Dairy Hall)

Method

Mix together the breadcrumbs, raisins, sugar and sago in a bowl.

Add the milk, and soak for at least one hour.

Mix bi-carb soda with a little milk and the melted butter. Add to the breadcrumb mixture.

Grease a pudding mould, place over a pot of boiling water and steam for 2½ hours.
