Paw Paw

This succulent spring salad is as light and fresh as the season.

Asian-inspired Paw Paw and Mango Salad Recipe

Ingredients

1 paw paw (Fresh HQ at Queen Vic, Stalls 88-89, B Shed)
2 ripe mangoes (Fresh HQ at Queen Vic, Stalls 88-89, B Shed)
1 red capsicum (Fresh HQ at Queen Vic, Stalls 88-89, B Shed)
3 tbsp boiling water
1 tbsp sugar (Nut Trek, Shop 55-56, Dairy Hall)
1 red chilli (Green Leaf Produce, Stalls 39-42 H Shed)
2 cloves garlic (Green Leaf Produce, Stalls 39-42 H Shed)
1 tbsp rice vinegar (Garden Organics, Stalls 71-76, I Shed)
1½ tbsp lime juice (Fresh HQ at Queen Vic, Stalls 88-89, B Shed)
1½ fish sauce
coriander leaves, to garnish (Green Leaf Produce, Stalls 39-42 H Shed)

Method

Slice the paw paw, mangoes and capsicum and arrange on a platter.

In a small bowl, combine the boiling water and sugar and stir until dissolved.

Finely chop the red chilli and garlic and add to the bowl, along with the rice vinegar, lime juice and fish sauce, and mix well.

Pour over salad and garnish with the coriander leaves.
