The addition of fresh spinach to these popsicles doesn’t affect the taste—so the kids won’t notice either.
1 honeydew melon (Benny’s Fruit Corner, Stalls 1-2, H Shed)
large handful fresh mint leaves (Green Leaf Produce, Stalls 39-42, H Shed)
2 small Lebanese cucumbers, chopped (Benny’s Fruit Corner, Stalls 1-2, H Shed)
handful fresh spinach, rinsed and chopped leaves (Green Leaf Produce, Stalls 39-42, H Shed)
Cut honeydew in half and scoop out the seeds, then scoop the flesh out into a bowl. Pour the melon and any juices from the bowl into a blender with the mint leaves, chopped cucumber and spinach.
Blend until smooth, then pour into popsicle moulds. Freeze overnight.
