Guava has a unique flavour that marries well with the spices to create a moreish cake.

Guava cake with spices Recipe

Ingredients

3 cups self-raising flour (Nut Trek, Shop 55-56, Dairy Hall)
1 tsp freshly grated nutmeg (Nut Trek, Shop 55-56, Dairy Hall)
1¼ tsp baking soda (Nut Trek, Shop 55-56, Dairy Hall)
pinch ground cloves (Nut Trek, Shop 55-56, Dairy Hall)
pinch cinnamon (Nut Trek, Shop 55-56, Dairy Hall)
2 cups sugar (Nut Trek, Shop 55-56, Dairy Hall)
250 grams butter (Curds and Whey, Shop 12-13, Dairy Hall)
4 eggs (Farm Fresh Eggs, Stall 43-45, I Shed)
1 cup guava pulp, from 3-4 medium guavas (Fruit & Veg Supply, Stalls 21-25, H Shed)
½ cup fresh guava juice (Market Juice, Stall 26, A Shed)

Method

Preheat oven to 180°C, and grease and flour a 20cm x 30cm cake tin.

Sift flour, nutmeg, soda, cloves and cinnamon into a bowl.

In a separate bowl, mix together guava pulp and juice.

In a third bowl, cream together butter and sugar. Add eggs one at a time, making sure each on is well combined before adding the next.

Alternately add the flour and guava mixtures to the egg mixture.

Pour cake batter into prepared cake tin and bake for 30-35 minutes, or until a skewer inserted into the middle comes out clean.
