Avocado

Smashed avocado is one of the most popular breakfast choices when people are dining out and variations can be found on most cafe menus.  It’s an incredibly quick and easy dish to recreate at home, and best of all you can adjust the quantities to suit your tastes.

Smashed avocado and herb toast Recipe

Ingredients

1 avocado, mashed (Green Leaf Produce, Stalls 39-42, H Shed)
squeeze lemon juice (Green Leaf Produce, Stalls 39-42, H Shed)
fresh basil leaves (Green Leaf Produce, Stalls 39-42, H Shed)
fresh mint leaves (Green Leaf Produce, Stalls 39-42, H Shed)
fresh coriander leaves (Green Leaf Produce, Stalls 39-42, H Shed)
soft feta, crumbled into bite-sized chunks (Big Vic Deli, Shop 25-28, Dairy Hall)
2 slices wholegrain sourdough (Andrew’s Bread Shop, Shop 29-30, Dairy Hall)
pinch chilli flakes; optional (Green Valley Spices, Stalls 36-40, B Shed)
salt flakes, cracked black pepper (Green Valley Spices, Stalls 36-40, B Shed)

Method

In a bowl, combine mashed avocado, lemon juice and fresh herbs. Gently stir through feta chunks.

Toast the sourdough, and cover generously with the avocado and herb mash.

Sprinkle with chilli flakes, if using, and season to taste.
