3 Healthy Ice Cream Recipes That You Can Make Without Any Fancy Equipment!

Making my own ice cream is one of those things I’ve always wanted to do, but never attempted because I always put it in the too hard basket. But this summer I’ve been playing around with making creamy, yummy ice cream using just a couple of ingredients – and no fiddly ice cream maker.

After a little trial and error and two kids on hand who are always happy to be my taste testers, I’ve created three super simple ice cream (or should I say, nice cream!) recipes that I wanted to share with you. And the best bit? They are dairy and refined sugar free. Plus, you can pick up all the ingredients the next time you visit the Queen Victoria Market.

Raspberry Banana Nice Cream

With just two ingredients it doesn’t get any easier than this!

Ingredients:

  • 2 frozen bananas, peeled and chopped
  • 2 cups fresh or frozen raspberries

Method:

  • Puree bananas and raspberries in a food processor until smooth.
  • Serve immediately or pop in the freezer to enjoy later. If making in advance, let soften at room temperature for 15 minutes before scooping.

Mango and Coconut Nice Cream

This nice cream tastes like summer! To enjoy all year round, buy mangoes when they are in season, slice the cheeks off and freeze.

Ingredients:

  • Flesh from two large mangoes, cut into chunks and frozen
  • ½ cup coconut milk

Method:

  • Puree mango and coconut milk in a food processor until smooth.
  • Serve immediately or pop in the freezer to enjoy later. If making in advance, let soften at room temperature for 15 minutes before scooping.

Blueberry Banana Nice Cream

Perfect on a summer day, this recipe is a guilt-free version of regular ice cream.

Ingredients:

  • 2 frozen bananas, peeled and chopped
  • ¼ cup fresh or frozen blueberries
  • I teaspoon pure vanilla exract

Method:

  • Puree bananas and blueberries in a food processor until smooth.
  • Serve immediately or place in the freezer to enjoy later. If making in advance, let soften at room temperature for 15 minutes before scooping.
