Seasonal Stars Recipe By Adam D’Sylva

At our recent ‘Seasonal Stars Goes Fishing’ event held as part of the 2014 Melbourne Food and Wine Festival, Adam D’Sylva teamed up with George from George The Fishmonger to bring us the best seafood recipes and tips for the season. Here is Adam’s delicious Tandoori Salmon, Wombok and Mint Salad recipe for you all to try.


Tonka’s Tandoori Salmon, Wombok & Mint Salad

Ingredients (serves 4):

4250g             Huon Atlantic Salmon portions, skin on

Tandoori marinade:

500g                Indian style yoghurt

150g                kashmiri chilli paste

20g                  ginger paste

20g                  garlic paste

1 tsp                 cumin powder

1 tsp                 garam masala

1/4 tsp             fenugreek powder

40ml                 mustard oil

1/4 tsp             black salt

sea salt flakes to taste


Blend all the ingredients together then rub the marinade liberally on the salmon and marinate for a minimum of 6 hours. On a hot barbeque or grill, cook the salmon until it’s pink.
