Christmas Recipes: Modern Christmas Lunch with Chicken Salad

For Christmas with a twist, try this modern take on lunch with the family.

Chicken Salad
Serves 5

2½ cups shredded cooked chicken

1 large celery stalk, chopped

½ green apple, diced

½ cup toasted walnuts

2 tablespoons chopped fresh parsley

2 spring onions, finely sliced

1 large handful of rocket

mayonnaise, as required

juice of 1 lime

a pinch of salt
(Maldon sea salt from Wood’s Aussie Deli; see above)
freshly ground black pepper

Combine all ingredients until evenly mixed and keep in the fridge until
you are ready to serve.
