220g milk or dark chocolate, broken into pieces (M & G Caiafa, Shop 66-70, Dairy Hall)
2 cups shredded coconut (Nut Trek, Shop 55-56, Dairy Hall)
mini speckled candy eggs (Koko Black, Shop 71-72, Dairy Hall)
Place the chocolate pieces in a heatproof bowl and melt in the microwave on low heat, stirring every 30 seconds and being careful not to let it burn.
Stir in the shredded coconut until evenly coated in chocolate.
Spoon the mixture into cupcake cases, indenting the centre with the back of the spoon to make a nest shape.
Press two or three mini candy eggs into each nest and refrigerate for around 30 minutes, or until set.
